Even the freshest lobster in the country won't be fresh if you have to wait for it long enough. Here in Boise, we've got no choice but to keep waiting for what's allegedly "the world's best lobster roll."

We've just learned that Freshies Lobster Co. will not be coming to downtown Boise as planned--at least not this summer.

Freshies, which claims to make the world's best lobster roll, was supposed to help fill up the newly opened Warehouse Food Hal on S. 8th Street in downtown Boise. Now, the Utah based brand says they're putting the move on hold. Indefinitely.

Freshies' owner, Lorin Smaha, confirmed the decision to put the launch in Boise on hold. The seafood company was not among the 11 food and beverage vendors that debuted inside the massive Food Hall on July 12th.

According to the Warehouse website, Freshies is "coming this fall." However, it looks like it's a catch and release situation, and Freshies won't be reeled in quite as easily or on-time, as we had hoped.

Smaha said, "As soon as we are able to revisit an opening there we will be sure to let you know."

This is certainly a let down for Boise-area foodies. For lack of a better term, Freshies would be a catch in downtown Boise. It was definitely the most hyped restaurant coming to the Warehouse. We don't have tons of options for fresh lobster, being in Idaho. So, this was something I was really looking forward to.

As it turns out, "world's best lobster role" isn't just a claim. It's a title. In 2017, Freshies surprised New Englanders by actually winning "World's Best Lobster Roll" honors at the inaugural Down East Lobster Roll Festival in Portland, Maine.

Freshies signature fresh lobster roll is served on a New England hot dog bun with mayo, hot butter, and seasoning. Smaha says simplicity is key by using, "very simple ingredients that let the quality of the lobster shine."

It's not all lobster rolls at Freshies, however. They also serve up lobster macaroni and cheese, lobster bisque, spicy lobster sliders, and more!

Freshies was founded in 2009, and operates a food truck and two restaurant locations: one being in Park City and another in Salt Lake City.

This doesn't mean Boise will never get one, it just means we're going to have to be patient. If you've ever been fishing, patience is what it's all about. Just sit back and wait.
